My understanding is a U.K. passport holder with no second EU passport would most likely need to be able to prove they had the right to live in and/or work in the country the company was registered/based in. Most EU airline job ads that I have seen either request an EU passport or right to live/work in the relevant EU country.

Edited to add - i have seen some ads, mainly from companies based in Germany such as EAT that may specify right to live and work in Germany in lieu of an EU passport . But as Denti wrote below, if you got residence / work paperwork sorted prior to the withdrawal agreement coming into effect, it’s limited to that country and nowhere else.

This is a red herring but recently the pilot hiring situation in the U.K. was pretty good ….Virgin, DHL U.K. , West Atlantic , Jet2 , TUI and BA have all been hiring in recent months ..
