From my own limited experience the guys at Southaer were great - I did some initial PPL training there until work commitments and lack of funds kept me grounded. I think it's just the one Cessna they have, the rest (2 or 3) are Cherokees (I could be wrong). That's about it for fixed-wing in Cork. There is a new heli-op company there now though. Further afield is indeed Rathcoole but that's mostly private flying - doubt if you'll get anything there for hire. Another option would be to get yourself up to Limerick to the flying club at Coonagh - no personal experience but I have heard good things. With all that being true, your best bet remains Southaer - if you can organise it, the local flying is great.
