Cabin Crew Ranks

I am just wondering how different airlines work the ranks of CC on each flight. In my previous years experience, working both charter and scheduled on on variety of aircraft, there has always been:

1 Purser/Senior CC,
1 No2 Bar - in charge of all aircraft bars/monies and catering, and
X amount of Junior/Main CC.

The reason I wonder is that I am currently working on 737 family aircraft and there is no variation of rank among the CC, except purser. I just sometimes wonder if a brand new entrant CC should be allowed to manage all the bars, duty free, monies and catering, in addition to a section of the aircraft and the rear galleys.

So how do the likes of Astraeus, Ryanair, easyJet, European, Titan, Monarch, Air 2 bob work the CC on each flight, as all fly similar sized aircraft to the 737. Is there always a No2 rank or are airlines moving away from this and just allowing Juniors to take on this responsibility or are the Seniors getting all the work? I would have hated to do all the bars, aswell as assessments and the paperwork when I was a Senior, it takes bloody ages!
