The likes of Paris now have only RNAV SIDs and STARs.

Aircraft that are Non-RNAV can still operate but have to declare themselves as non-RNAV.
As far as I can tell both Aread and Jeppesen do not provide overlays for RNAV SID/STARS.

In that case what published data do you non-RNAV guys have. For example how do you maintain runway heading on departure?

Any info appreciated.

The way to do this is to tell delivery / clearance that you are non-rnav and require radar vectors after departure.

On departure, unless told otherwise fly r/w track and remind departure controller when you get switched over.
