CAA certified examiners in Texas
My EASA SEP (A) rating has expired.
I have the FAA endorsement and a valid medical but I need to renew my rating.
Does anyone know of any EASA certified examiners in Texas, who could renew my rating?
Or do I need to go to AAA in California?
The list of approved EASA schools which the CAA used to have on their website no longer exists.

Your choices are Florida or California. There are no examiners in Texas that I know of.
All overseas ATO are now under EASA oversight, not CAA oversight. The list you are looking for is found here:

You can continue to fly on a 61.75 foreign based certificate after the rating on the underlying licence has lapsed so long as the licence itself is still valid and you have a current flight review.
When you next need to exercise EASA licence privileges, you can take an LPC with an EASA examiner at that time
