Question Best kept secret in the US

Would anybody be so kind as to offer advice on the following:

I need to get my flying skills up to scratch again before I can go and attempt the CPL flying test in the UK ( I am from Belgium , and currently hold Australian licences ( CPL/IR) ).
I would like to concentrate on handling skills, and would therefor be looking at learning to fly a taildragger and some aerobatics.

My question is, where can I go ?
I would be most happy with a small, low profile outfit, with an old grumpy CFI who likes a challenge...
Any such place still around ?
