I am travelling to the the US from Australia for a lightning fact finding mission with regards to working as an instructor. Any ideas where the best areas to start looking? I have 10 days to look.Interested in Dallas or Florida areas.

Try a search in this topic, and also WANNABES (search flight schools in the U.S.). The search results might give you some leads.
I assume you are aware of the Visa requirements. If not, one of the schools that you focus on should be able to advise you of the requirements.
Good luck mate.
