Don't know about the EU, but when I was looking for a job a year and a half ago these were some of the offers I had:
Lion Air - Jakarta was offering USD 4750 per month for an instructor position through Rishworth.
That Tunisian Operator that comes up with a contract every year was at USD 4000 plus another 1000 for expenses on a contract through one of the British agencies. That was down from 8000 per month in the mid 90s.
Allegiant in the United States was around $57 per hour for captain.
Far Eastern Air Transport in Taiwan is down to about USD 6000 per month with one month unpaid leave per year. That had been as high as 11,000 per month in the mid 90s.
As the airplane gets older and more third world it is becoming difficult to find decent paying jobs.
