Q1.
Pull speed initially then Go around. Watch out as SRS will re-manage speed so you will have to pull again at the acceleration altitude. Highlight it, take a breath, ensure the other guy is ready for what’s goin to happen and then go for it.

ECAM actions and landing distance assessment during the missed approach when safe to do so.
Try to work precisely and methodically as if this happens on final on a 1800m greek Island runway in CAVOK (let’s talk about our summer time possible scenarios) hence with not much extra fuel in the tanks, you won’t be in good shape.
Landing with slat and flaps jammed procedure.
Advice: the above is one of the procedures that is worth reading from time to time in cruise whilst enjoying the view outside, just to avoid any surprises if the day comes and you need to apply it with 2.0T in the tanks. Same goes for the fuel leak, the smoke and the summaries.

Q2. FCOM

Within my operator in 30 years of operations of the A320 family and countless hundred thousands of flight hours it has happened once (not to me). Crew took a hold on final, it was a small not so busy airport with a decent runway length and good weather.
