B737 Stab Trim Switch(es)

Can someone explain off of a reference why the trim switch on the control wheel is actually two switches side by side?

They prevent a runaway caused by one shorted or stuck switch. this way there are two breaker points in the circuit. (plus the cutout switches...)

And you can even operate the trim with both switches in different directions!
Now try it and see which one give the direction input and which one just make contact.
