Headset jackplug wiring Vs Headsets

I've been wiring a radio into a homebuilt 1950s wooden thing and have had to put in standard Tip-Ring-Sleeve jackplugs since they are the ones that came with the kit. Now, I've tried a non-military headset in it and it works OK but the same heaset in the 757 comes through one earpiece only.
Ideally I'd like to be able to own a single headset for the 2 noisy aircraft.
Is there a difference in the headset jackplug wiring, presumably for powering the mics or for stereo?
If so, is there an ANR headset that allows a change between both types of comm, has volume controls for each side and (if poss) an aux comms input for phones/MP3?
I asked the base avionics chap and he didn't know anything more on the subject than I did.

Any good info might save me from wasting serious cash on a dud headset.
