Smoke is the visible byproduct of pyrolosis or combustion, whereas fumes are not necessarily so. An example of fumes might be a strong smell of hydraulic fluid or fuel through a bleed air duct. Fumes may be the precursor to smoke. Or, you may never seesmoke until it's too late. Fumes may or may not be visible. You could say that smoke is something burning or smoldering, whereas fumes are everything else. In flight, it really doesn't matter; both represent an immediate problem.
The upshot for you as the pilot is that either one represents contamination in your environment, a health hazard, and a threat to safety of flight, and both will geneally require the use of oxygen and a change in plans.
