I assume you are talking about the Airbus series, if so a company called 'FAROS' has produced a very good FMGS trainer. It is a point and click affair and every landing will be an autolanding + zero visuals.

It sounds like you are looking for some software that simulates a PFD, whereby you can sort of practice hand flying while following the FD commands, if I have it right, I'm not aware of such software, would be pretty handy though.
