You don't say where you're based or what dept in airline ops.
What you're asking for covers a big subject and I'd have thought there would only be room for a partial response on a site like this.
What you really need, in my view, is a day on the Apron (sometimes called by the Americans the 'ramp') with your Handling Agent, find a friendly person who knows everyone and is prepared to show you around. I'd have thought your employer would have laid that on for you.
Alternatively, you could seek out the aerodrome's Airfield Ops department and get them to show you the basics.
From an H&S point of view, a basic induction should show you the in's and out's of the Apron, anyway.
