Landing Video Question

Re the following video, is it standard practise to disconnect the autospeed on approach ? And why is it done especially with the GS mode engaged, maybe to give the pilot greater control for some reason ?

In my company most pilots use manual thrust when flying manually. It is good training, more intuitive and quie frankly fun. But to be honest, even more fun is to simply switch everything off and fly the whole deal raw data from something like FL200 down, not to mention it saves a ****load of unnecessary FMA callouts.
