AIS knowledge

Looking at each countrys AIS from this website -

AIS Websites

Do pilots have to learn each countrys AIS just like learing the ICAO DOC ?

Not quite. There are many ICAO docs and pilots will have to be familiar with certain parts of them. It would be pointless learning. the AIPs although, again, they have to be familiar with certain parts. Same goes for Air Traffric Controllers.
