Stansted spotting

I'm flying into Stansted in Friday morning and have a bit of time before I need to head into the big smoke. Is there anywhere I can spot from inside the terminal building?

As far as I remember, there is no view at all from the land-side area of the terminal.
You might get the odd glimpse of incoming/outbound aircraft if you go to the car-hire parking compound, but you would obviously then be outside the terminal.

On the assumption you have no hold luggage to collect there is nothing to stop you once off the aircraft to not follow the signs to baggage reclaim but to go the other way on the donestic pier to the end gate(s) where you could wait in the waiting area and see out the glass windows.

Then go through domestic security once nearer the time to get to the big smoke

There is a security person at the end of the domestic arrivals pier who prevents access to the departure lounge alas. You will be able to remain on the domestic area downstairs and there are some views but it's not great. You can view movements from outside the terminal but photography is pretty hard.
