Cruising heights UK vs Australia

In Feb we flew a 737-800 between Brisbane and Sydney. IIRC about a 1.40 flight - cruise at 43,000. Here (starting in UK) on similar legs on similar a/c we don't seem to top 24,000 - why's that?

Level capping between short haul city pairs for flow regulation purposes. There's a damn site more traffic in Europe than in Australia.

All to do with level capping, flow management, what you're flight planned at etc. However you couldn't possibly have been at 43,000ft in a 737-800. Max service ceiling for the 800 is 41,000ft.
