What is a sector?

I know this may be a silly question but what exactly is meant by the term sector?

Is it a single route?

i.e Stanstead (STN) - Ibiza (IBZ)

Or, is a sector say a country or region

i.e. Stanstead (STN) - Spain .... numerous airports

And what is sector pay?

I know that a pilot may be required to do a number of sectors a day, therfore I am leaning towards my first answer but I have not been able to find a difinitive answer.

Thanks in advance
