Question of Angle of Attack

A question which has bamboozled me, although I've flown RC models for many years- is how does an aerobatic model aircraft set up -zero- zero -zero/ engine- wing -elevator- stay in the air, without a correction being made to the trim.

I can guess at the answer, but does anybody out there have any theories?
