FO or SO?
Got invited to the second interview in HK, however, I interviewed for a FO position but the invite to HK is for a SO final interview. So, did they decide I should start as an SO? Is it a mistake? Can I be offered a FO position? I am very greatful for the oportunity however and would take either one.

This is not unusual and happens to a lot of candidates lately. I don't know your experience level but there seems to be a certain gap between the requirements for the freighter fleet and the numbers of hours the guys they hire actually have. You're probably more likely to go to freighters if you have some heavy jet time or at least A320, 737 experience. This is only what I have been told and so I stand to be corrected by freighter pilots.
In any case, if moving to HK isn't a problem for you, the SO way is probably a better career path in terms of salary and benefits.

I'm Mil, 2500 hrs, 1500 hrs Fighter (at around 220 hrs/yr).

Don't think of the offer as a downgrade.
The FO and SO entry avenues into Cathay are tremendous opportunities. They both have their pro's and con's. Most importantly, they both lead you to the exact same place. Congrats!
