I find that the A321 needs a shallower lower...

I find that the A321 needs a shallower lower flare with a slight reverse flare at the end.
Maybe just try keeping the thrust levers in CLB until you flare before selecting idle.

ie. 50kt of headwind speed target will increase 0.01M

As long as you have a CPL your set for a job. Most people arrive with 200hrs and a bare CPL. Company's not to bothered about total time. 5 hrs in a 206 is normally a help for the licence conversion!...
