Career after flying

Hi all,
I'm an ex military Rotary Crewman currently working as a Crewman for a private company. I've recently started to think "where is this leading me?"

What sort of jobs have you people managed to take on after your flying career? How do you get into instructing? Aviation safety has long interested me, but is there a route for this as a Rotary Crewman? Anyone managed work for the CAA or IATA?

I have plenty of hours and have done plenty of training in my career, but I suppose I'm just looking for a little direction. I'm planning for the future a bit.

Always fancied SAR, but I think that's just 'jobs for the boys' from what I hear.....
