Switching Focus?

When do pilots switch from visual flying to using instruments? Obviously in the dark but how about during the day in fairly clear conditions and then encounter clouds?

Have been with pilots as a pax where they literally turn around and go the other side of a mountain to maintain the visual flying option, that, as a pax was fine by me.

Other opinions appreciated.
