The papers and info you need are at www.gc.ca - the good news is that pilots get 15 points automatically. However, the whole process takes nearly a year, so the trick is to apply in your own country, get the file number, turn up in Canada as a visitor and present yourself at the nearest immigration office and ask them to transfer the paperwork. They may issue you with temporary paperwork pending the full stuff.
