What sort of flying?
Military Heavy-Haulers, fast jets, helos?
Civilian Helicopters?
Ultralights?
General Textiles (Gentex) are a big supplier for military. See also David Clark website for all sorts of flight suits (including pressure suits and space suits, with ancillaries). Search ultralight sites for helmets and headsets for trikes and 3-axis u/lights.
Big subject, will probably keep you busy for a while.

If you're in the UK there's a company at Shoreham Airport, Headset Services, who deal with all the major helmet manufacturers.
