CAP371, the operator's interpretation of a week?

Would be very gratefull if anybody out there could let me know how their company defines a week with reference to the 55hr duty limits(extendable to 60hrs duty with unforeseen delays)? ie. Is it 7 consecutive days or a 7 day period starting from a set time on a set day?

Cap 371-a period of 7 days starting at any time and on any set day as specified and stated by the operator.
My company uses 00.01 gmt saturday.
I believe the new rules coming in next april change it to a rolling 7 day limit-about time too!
