Returning to Aviation

Is there anyone out there who worked as a pilot, left for say 2 or 3 years to do something non-aviation related, and then returned to flying?

Yes, three and a half years for me, but admittedly the time was spent in Performance Engineering and the writing of FMC programmes. Definately aviation related, but I didn't see the inside of a cockpit in that time.

Upon return, it was as though I'd only taken the weekend off, except for the damned rule changes.

Most military pilots and navigators have to do to one (or several) 'ground tours' , ie periods of 2 - 3 years in a desk job, before returning to full-time flying. It is perfectly normal, and they are just as good as anyone else after a short while back.
