Flight Schools in Texas

I'm looking to do my IR and CPL (and possibly afterwards complete CFI/CFII) and i'm looking for a school in Texas as this would be the most convenient for me. Does anyone have experience with any schools in Texas? Any places to suggest or any places i should stay away from?

Yes, some DPEs can issue CFIs. Keeping it current is not a big deal, just complete a 16 hour online training course every 24 months. If you let the CFI expire you must pass the checkride again or pass a checkride to add another rating to the CFI.

Most of the online renewal courses will, for an additional fee, process your 8710. You have a three month window to submit the paperwork and still keep the original base month. Any earlier and it resets your 24 month calendar.
