Basically it's what it says it is. A number of airlines pay their flight deck a salary, on top of that can be certain allowances i.e. a payment for making a Nightstop, or an hourly rate whilst on duty. i.e. £3 per hour during the duty period. Sector pay is a variant on the hourly rate bit in that the crew are paid a fixed amount per sector (with a flight from Manchester to Paris and return being two sectors). This can vary enormously but somewhere in the region of £15-£25 is not uncommon. Take into account that an a short haul route, a pilot flying two hour sectors (average) can fly around 400 sectors a year. In essence it is a method of encouraging crews to want to fly more, to keep their basic salary high.

There are all sorts of add on payments floating around the industry. Some crews get paid a sum if they are on standby, Most crews get a large sum, if they are called out on a day off to work. Sector pay is one of the more common 'allowances'.
