Hello can someone answer the following:

We all know that to unfreeze your ATPL you need 500 hrs on a MPA and a total of 1500 hrs.

Can you do the simulator check that you need for this before you have the 500 hrs MPA?

No. JAR-FCL 1.280(c) states:

The experience required shall be completed before the skill test given in JAR–FCL 1.295 is taken.

Just make sure that you do a LPC, and not an OPC having gained the appropriate experience on MP aircraft prior to ATPL application.
