Hello mate,
Long time since we last spoke! Hope things are going well.
Not sure if they do a 727 rating, but I did have a spin in a 727 sim with Bond down at Gatwick so give them a call.
Good luck!

By calling you brave I am not reffering to the safety of the 727, I am refering to the job prospects for 72 compared to 73, A-320 family or even the humble ATR.
For once Scroggs and myself are in agreement, I assume that you are a current ATPL looking for something different and not young upstart looking for your first gig!

European Aviation in Bournemouth have a fully operational 727 sim, but I am not sure if they have UK TRTO approval. Cheapest route for you will no doubt be somewhere in Florida.
I see you also asked on the African forum about 727 ops... try Interair in Johannesburg, they operate a couple, also Transafrik in Angola if you want something more, shall we say, adventurous
I've flown with a few ex-727 drivers, they all agree its an awesome aerie!
Good luck

According to the CAA, there are no 727 capable TRTOs in the UK.
