Sim check?

Hi all
I was just wondering if someone could clear up something thats bugged me for a while now.
When you go to an interview for a job and get through to the sim check, What do you actually do in the sim check??
Assuming that you dont already have a type rating on that aircraft, How are you going to know how to fly it in the sim?

They are not expecting a perfect performance in a type you haven't flown before. You will be briefed before hand and you are expected to know the speeds and power settings. (Sent to you before the session).
What they are looking for is a rate of learning and an ability to self critique. You could also be assessed on PNF/non handling pilot ability as well.
In other words, do you have a reasonable scan, can you see things happening and correct them, learn from your mistakes/experiences.
