Even the older CAR 3 required emergency exits under some conditions
§ 3.387 Exits. (a) Closed cabins on airplanes carrying more than 5 persons shall be provided with emergency exits...

If you’re hired to fly the owner and his guests in an airplane which is owned and provided by him you’re just excercising the privileges of your FAA CPL.
It’s an Experimental so therefore does not need to comply with Part 23 or Part 25.
Now wisdom and judgement do not equal legal or vice versa.
I think you need to make the decision if you want to fly this plane or not.

(j) No person may operate an aircraft that has an experimental certificate under § 61.113(i) of this chapter unless the aircraft is carrying not more than 6 occupants.
I don’t think an emergency exit is required in this case.
