Hi,
Suppose that you have a JAA PPL(A) SEP. Can you log the time that you spend as co-pilot in a TMG (not under training) while not yet being rated for TMG ?

You can put what you want in your logbook. it just won't count towards your total time or towards the issue of licence or rating.

Bose-X, you are spot on, in a single pilot plane there can indeed only be one pilot.
Not all TMG are single seaters. Scheibe end Fournier have produced plenty of twin-seaters (TMG) used for training purposes.

You can't be co-pilot in a single pilot aeroplane, doesn't matter how many seats it has got. You can be either pilot, pilot under instruction, or a passenger.
