Week to fly in Florida- What to do and where

I may be in Florida in December with a week free to do some flying.
As a hundred hour PPL, who mostly flies a tiny permit aircraft from one muddy field to another, there may be possible areas in which my flying expertise is not complete.
Can anyone suggest anything fun and educational to do there, aeros, tailwheel etc? Where would be the best spot to go?

I think you can do some tailwheel flying somewhere around sebastian or valcaria. I recommend going to cecil airfield to get a glimpse of the air force doing some vertical takeoffs

If you're feeling adventurous, the Bahamas are between 90 mins and 2 hours off the coast. In addition to the aircraft, hire a couple of decent lifejackets and a liferaft (water temp not a problem!). As well as your navigation, it'll expand your experience of flight plans, customs & immigration and managing an overnight stop. Also, landing at an International Airport (Nassau), for the equivalent of about £5, definitely brings a smile to the face. If you have a 'better half' with you, they will be impressed - mine was!
