I went there a few years ago and got a taxi into the town centre. Can't remember a specific name of the restaurant, but there are quite a few decent ones to choose from.

Rent a couple of bikes! Cheap and very good quality, the ride into town is pleasant. Just remember to go backwards round the roundabouts. There are several nice restaurants in town, I'm sorry but I don't remember the names of any.

For fish Perrard's is the best but you will find no shortage of good eating in Le Touquet but I would stay away from the seafront as these bars don't have to work hard enough to attract customers.
I would walk from the airport it is about 20 min into the centre of town and by the time you get to the restaurant you will have a good appitite.
Week days you should not need to make a reservation but getting a table at Perrard's on a weekend is imposable without booking ahead.

As others have said, Pérard has very good seafood. It is perhaps not the most romantic of restaurants though if that's a factor. Their web site is here.
There is one restaurant in Le Touquet with a Michelin star and that's Le Pavillon in the Hotel Westminster - details here. Mrs FS and I had an extremely good meal there earlier this year. Excellent food and very friendly, unstuffy service.
There is also Flavio's which is quite smart and also does fine food, though I think it's a little pricey for what it is. Details here.
One place that is often overlooked (partly because it's up a flight of steps and is easy to miss) is Les Deux Moineaux - The Two Sparrows. It's towards the beach end of rue St Jean, the main shopping street. It's small and intimate and has very good food. We had an excellent lunch there on Saturday. Their web site is here.

Flavio , 1 Avenue du verger (of an evening) Italian style very good food nice terrace (often heated) - possibly too rich for a lunch time.
Le Jardin is excellent for Lunch (nice views opposite the Casino).
Le Village Suisse just down the road from the Westminster hotel is also very nice. Perrards looks good but I dont eat fish
For somewhere different a short tax ride out of town to the Auberge de la Grenouillère (you need to book ahead).
Most of the other restaurants are good/ok but not special...but there are lots to try.
You didnt mention if you are overnighting - if so book the Westminster Hotel. As others also point out you can walk in, and we usually do (pickup a map at the airport counter) but if you are dressed for a nice dinner and the wife doesnt have walking shoes then get the taxi.

My favourite is the "Cafe des Arts" on rue de Paris, a block or so back from the beach. French cuisine with a modern twist. It's a good idea to take a french phrase book if you want to know what you're eating!

I can endorse Les Deux Moineaux but you will not be disapointed wherever you go. I haven't had a bad meal there in the last twenty years. The walk in is a good idea and you will get to see some lovely property as you go. Good luck with the weather.

If its a day trip then walking may consume too much time.You should allow about 1 hr from touchdown to arriving in town. Don't forget they are 1 hr ahead so you need to get there by 11.00 UK time. Rolling into town at 1.00pm UK time will mean a sandwich.
If you get a taxi then I also suggest making a booking for the return journey when they drop you. Finding a taxi when in town is difficult and if you are trying to get back before dark it can be frustrating.
Also you can file your return flight plan before you depart from the airport, then all you need to do on return is get in and go. The people behind the desk are very helpful.

I would certainly recommend Le Jardin but have always had trouble finding Le Village Suisse open-and if they are-the staff don`t seem very interested in serving Brits ! Very offhand to the point of being rude despite doing my best with speaking French.We also tend to walk into town firstly because it is such a nice walk and secondly because you might get the lady taxi-driver with a VERY smelly dog spread over the front passenger seat !!!

Perard is very good: has kept its 50's decor.And you can stock up on fish soup moules and langoustines from their shop.
At weekends you need to book but you should be OK on a Tuesday.
If you're flying in just for the day don't waste time walking/cycling: get a taxi and get taxi driver's card and phone on your mobile when you're ready for pick up for return.
The Lady with the smelly dog is actually quite pleasant if you take the trouble to talk to her...........
As ZA says, get all the return flight planning done and filed before you go into town: If you are uncertain about the minitel etc, the peeps behind the desk are first rate and will help you and will even take you into town in the Aeroport minibus if you are stuck.
Avoid the posh restaurant in the Westminster: the food is pretentious, expensive and in IMHO not very good: However the Bistro (where most of the Hotel guests eat) is excellent: can't remember its name.

Interesting that you had the opposite experience of Le Pavillon at the Westminster CUSCO. I wonder if it's getting better or worse - we were there in April. Still, it's handy that not everybody agrees on these things or there would be one restaurant with a very long queue and lots of bankrupt empty ones!
