"Why do airlines persist in serving us in-flight meals? "

Agreed joy ride.
I recall boarding a Sunday evening Lufty at LHR and was sitting near someone scoffing a MacD whilst waiting for Push. Now, I do eat at MacD sometimes but the smell in the small cabin (probably a 320) was revolting

I never eat on board aircraft, just because I am a fussy eater and tend to eat a light meal before I board and on 12+ hour flights will take a snack to munch if I get hungry.
I normally fly business class, and during night flights the crew tend to be absolutely fine when you don't take a meal. But the confusion during day time flights, particularly with any of the Asian airlines can be ridiculous. I have had the Cabin Manager/Purser/CSD come up to me to find out if there is something wrong, do I have a problem with the menu or am I sick. It seems to be beyond comprehension at times that I am just not hungry and a black coffee with perhaps a biscuit will suffice.

And in the Terminal..
It may have changed since I last experienced it, But the odour from the Fish and Chip shop at Gatwick was overpowering. And, that was early morning before it had opened so it had persisted overnight.

My first scheduled airline flight, around1969. London to Glasgow....I was stunned to be served a hot meal!...even if i'd missed breakfast, it was still only an hour, tops,to wait .
learned the lesson and skipped lunch prior to the evening flight back, a week later.
Wouldn't have bothered if there was none at all.......flew Liverpool Limoges about 5 years ago (RYR) managed to go a whole 90 minutes or so, without food or drink
