Interline baggage

Interline baggage
Can I choose not to interline my baggage? If I am on a flight through MAN and the stoppver time is 6 hours I would rather collect my luggage and re check it in myself?
Also if I am travelling MCO-MAN-DUB do I have to collect my luggage to go through customs anyway

That depends on the airline and your fare basis.
Some airlines insist on interlining baggage if a stopover is not permitted in MAN, to ensure that you actually complete your journey. (In many circumstances, the fare MCO-MAN-DUB is actually cheaper than MCO-MAN or vv) Other airlines are more laissez-faire. There's certainly no harm in asking to have your bags in Manchester!

A couple of months ago I did CEB-HKG-LHR-GRU and CX in CEB were happy for me to check the bags (and give me boarding cards) to LHR only. The only reason was, that I needed to hand over one of the bags (containing promotional material) to a colleague. I then checked-in myself and other bag at LHR.
I was on a combined CX/BA ticket with no stopovers (even though I had 16 hours in London) in I class.
