Question 737 Fuel Burn Figures.

Re 737 all series.
Would anyone here have an idea of differing fuel burn figures for various altitudes (LRC MRC etc)?
Is there a rule of thumb with these figures , particularly with holding ?
Is there a fuel burn formula for various speeds / weights /configurations ?.
PS is there a marked difference between Classic and NG figures?

The b737.org website is great, however the rule of thumb tables are for the classic. Is ther one for the NG available ??
