Massey Uni (www.massey.ac.nz) offer CPL stuff which you can do by distance - but they may charge you International student rates. Might be worth waiting till you are here.

PPSC (Prof. Pilots Study Centre ??) is a dedicated distance learning organisation.
Don't have any contact details but some pprunner in NZ should have and may be nice enough to post such details.

Trevor Thom
Trevor Thom books are some of the most widely used theory books in NZ.
Some of them cover both CPL & ATPL (Met.) and others only cover CPL. Resonably priced and simple to understand.
I defininetly recommend them over some of the schools theory.
You can find out more about them by calling Walter Wagtendonk on +647 548 1654 or +647 544 1416. His address is Aviation Theory Centre NZ Ltd, 155 Waipapa Road, RD 6, Tauranga, New Zealand.
Hope this helps out.

Distance learning - aviation subjects
Another option is the NZ Open Polytechnic for CPL and IR subjects. I and several I know have used them successfully. The feedback is very good. I can't remember the website address, but if you fiddle around on a search engine you will find them.
I can endorse the purchase of a box full of Wally's books too. Mine are quite dog-eared.
