You might be wasting your time going near the big cities like Sydney and Brisbane as there are plenty of others already there with your level of experience. Consider not spending long there.
Lake Eyre is starting up at the moment too.

Would you be prepared to push that throttle for free ryan? Because most sky diving mobs are like that.
If so, I suggest staying in Dubai and don't come over and help ruin Aus GA.

Have you looked at websites like this https://www.transfercar.com.au/ where you can hire free camper vans/cars so that those car hire companies don't have to pay for there car/camper van to be trucked back to Alice springs or where ever. Might save you some money just as a suggestion. If you are lucky you might find a 4wd. Even if you get stuck in Alice springs you can always hop on a tiger airways flight for $99.

Aus is a big place and you best bet to land a job is the top end and northern WA as this is where the bulk of potential employers are that hire new drivers. A road trip is all good but think you will end up north in the end so why not start there.

Licence?
Hey Ryan just a quick one - do you hold an Australian licence? If not, you might be jumping the gun a little.
I only ask because there is no mention of you having been to AUS before and I have seen a few guys with foreign licences take months and months to get them converted.
Good luck
