Hiring in Sydney

You can try:
Clamback & Hennessy
Schofields Flying Club
Whitworth Aviation
They are all at Bankstown
or
Curtis Aviation at Camden
That's a few to try.

Airborne Aviation at Camden has new glass cockpit C182s, although you can also do V1 in aTiger Moth or Pitts S-2C if you want

If you want just to hire a few times, go for Airbourne Aviation at Camden. Minimum problems and aircrafts are in a good condition. Basair is cheaper,
but that's probably the only good thing.

Sydney - Aircraft Hire

Go and see Rod Crane or one of the boys down at Pacific Flight Services (formerly Crane Air). Good aircraft at reasonable prices.

I can't comment on Camden, but schoefields flying club has my vote at Bankstown, aircraft, particularly the Piper's are always, clean and well presented and a modern club house to plan your flight from.
