Drug screening is part of your medical, during the selection process. They screen you for a bunch of residual chemicals left in the body by various drugs (recreational or medicinal).
Traces of illegal drugs in your system may entitle you for a free stay in one of the Dubai jails.
There is a website, I believe, listing what is legal and illegal in the UAE, regarding drugs.

The short answer is yes. They check for many things including your risk for abusing alcohol and a psychometric profile etc.
If you fly airplanes and smoke weed then I'd suggest you consider an alternate line of work like working in a shop that sells surf boards or perhaps a job in aviation management.

It's illegal in the UAE.
Early on during my stint there, I was shocked to see hemp chocolate being sold in the fancy sweet shop in Dubai Mall. It was quickly removed 😅
Hemp itself was listed last time I checked the no-no list.
