EK will never change the standard weights, but something to think about when you are given just 3% contingency fuel, especially on ULR's

Average American weighs 82kg, plus a realistic extra 10+ kgs worth of carry on and duty free. Maybe a walk through the cabin before ZFW calculations to take a look at the demographics... lol

+7kg (extra phantom weight per passenger) * 358 (passengers on a 3-class 300ER) = +2.5 tons of phantom weight

Take another walk through the cabin mate. It's all Indians and Arabs heading to and from the US. Not too many "Americans" back there.
