Can anyone eloborate on what the procedure is for applying for an Aircrew Licence with GCAA ?

Do they require a stamp verifying hours from ALL previous employers or are they satisfied with a stamp from your current employer ?

Apparently they review all log books is this correct ? I have many.

Do they issue a new log book for the UAE?

Why, got some dodgy hours in your log book to make up those 10,000 hours?!?

Only kidding! It is a simple procedure that will be spoon fed to you. I would assume that your previous employers stamped your log books when you left so you could get the next job. Those stamps/signatures should be fine.
