Background checks/Employment history in Europe

Hello,
From your experience in European airlines, do they perform "deep" background checks / employment history check once you get hired, based on the information you provide (CV and such)? As in, contacting previous companies, having to submit some sort of document, to validate the information provided.

I'm asking this because my work experience is not impressive at all, I've had mostly jobs in the farming sector, without working directly for a company and sometimes without any kind of contract. So some would be impossible to "validate".

I could omit some of this work experience from my CV, however I'd end up with massive gaps and I think that'd be worst.

Has anyone gone through a similar situation? Do airlines take this seriously? Appreciate any advice, thanks.
