Can anyone please tell me what the percentage of salary, if any, is being deducted from UK Based Crew for TAX?

All of it

Nearly all of it! UK tax 40% marginal rate soon to go up to 50%. Many guys now have HKG demand too if in HKG more than 60 days.
It is a cluster f**k.
