If the wx is good we use Macao, VMMC which is just outside your left window when on left base to rwy 07 L/R in HK. Obviously if the wx is bad in HK it will be bad there too.
Shenzhen ZGSZ is just north of HK which is temporarily unusable as an alternate (until Jan). It across the border in China.
Also in China, farther north is Guangzhou ZGGG. Kaohsiung, RCKH and Taipei are over in Taiwan. Those three are your picks of the pearl river delta area is under the weather.

Don't forget political considerations. If flying from Taiwan and Macau isn't available, don't think about using Shenzhen or Guangzou unless you are really stiffed. Landing in the Peoples Republic of China and being asked "where did you take off from", answering "The Republic of China" won't be a very good answer. Expect a long stay and lots of questions.
There is also Zuhai (just south of Macau) to consider, and don't forget Manila or other Phillippine airfields.
Also, if aircraft are diverting to Macau, get there quick! Ramp space is very limited and three diverting 747s will just about fill Macau to capacity.

No. of lines in TAF do not mean anything. It's the TAF content.
4 or 5 lines with only wind direction change, we can still use VMMC.
1 or 2 lines but 500, 800 FG... VMMC will be affected too.
Don't count on the lines, count on the content.
CX TPE-HKG, if MFM is not available, next one will be KHH, if closure, TPE.
CX PEK/PVG-HKG, if MFM is not available, next one will be SZX, CAN, XMN.
CX other than china/taiwan, MFM, SZX, CAN, KHH/TPE, XMN/MNL

sorry mate but :-
1. if fog on taf it will be more than 3 lines
2. if fog we are 3b so we will land >100m
3. wind can be a cause why you may do a go round- try 1500m ts with w/s! those conditions usually will be on tafs with 4 lines or greater!
