Unfortunately TC has no fitness center. The apartment complexes offer pseudo-gyms but they are woefully inadequate unless doing 1000's of reps with 5 lb db's doesn't bother you. Cx city is your best bet.

Caribbean Coast and Coastal Skyline are both in Tung Chung and both have great gyms.
Very clean with all the gear, everything you would need for a good workout.
Just bang on the door and say your a visitor will cost approx $20hk.
If you live in either of the above then $10hk for as long as you want.
If you have a friend that lives at either they can get you in or borrow there card and say you live there as we all look alike.

Yes, anyone from the CX group can use it. The pool is open all year and the fitness centre is pretty good. Less machines that over at the gym at the headland, but at least you can work out with a view and are not stuck in the basement. I think it costs $20 to use the facilities if you're not a member. opening times are:
Pool: Mon - Fri 0730 - 1900 Sat 0930 - 1700
Fit centre: Mon - Fri 0730 - 1930 Sat 0930 -1800
Sauna: Mon -Fri 0730 - 1900 Sat 0930 - 1730
Sundays, all closed. Don't know about public holidays but suspect closed. Also note that the pool sometimes get closed for pool drills.
